March is one of my favourite months - it seems unsure whether it’s still winter or spring, both looking back at the long winter we’ve come through and looking ahead to all of the growth and beauty that is to come. It’s my birthday month, which is super fun, and I just heard the first peepers of the season a few minutes ago! Now that’s something to celebrate. Of course it’s the month that my favourite flowers all year really shine - snowdrops, of course, which I have posted about before. And I’m sure I will again!
The crocuses are up and cheery despite the rain. And the bees are trying to get out between showers to collect pollen - we could use a bit of warm dry weather for them!
Ostara, Spring Equinox, Easter, warmer weather - whatever you’re up for celebrating, there is lots to appreciate! I made devilled eggs for the first time to celebrate the first day of Spring, and served them in this fantastic dish given to me by my lovely neighbour. It’s the season of eggs and chicks and we will have some new hens arriving in a few weeks to add to our old girls. There is no real reason why I had never made devilled eggs before - I love them SO much, maybe I was unconsciously keeping myself from eating dozens of eggs a week. The recipe I used is straightforward and absolutely delicious; I modified it slightly from one I found in a community cookbook I picked up at a book sale last weekend.
Devilled Eggs
6 eggs
3 tbsp mayonnaise
1/2 tsp each salt and pepper
2 tsp chives (fresh or freeze-dried)
paprika for garnish if desired
Boil eggs for 5 minutes and remove from heat. Let eggs stand in the hot water for 15-20 minutes. Drain, and replace water with cold water. Peel eggs under cold running water. Carefully cut eggs in half lengthwise. Use a small spoon to gently remove yolks to a separate bowl. Mash yolks and stir in mayonnaise, salt, pepper, and chives. Mix well, and stuff the boiled whites with the mixture. (Filling can be piped in with a pastry bag if you’re feeling fancy.) Dust with paprika. Refrigerate until ready to serve. Enjoy!
I was given this rose cutting a few years ago, and it was unhappy where I had it. It wasn’t getting enough sun, so I moved it last summer to this spot, and it seems very content. I don’t know the actual name, and I’m going from memory, but I think it looks like this. I’m hoping for blooms this year! It seems keen on growing.
